Pantry Pasta
If you don't already know about the genius that is The Pioneer Woman, then you must go educate yourself. She's a great writer and her recipes are delicous and easy, and man friendly. My husband LOVES whenever I cook Pioneer Woman meals.
Last night was no exception, but what makes this meal so blog worthy is it's deliciousness to cheap & easiness ratio. Everything in the meal was pantry or staples I keep on hand. (What? you don't have cream on hand? Well, you SHOULD!) The only changes I made to her recipe was to use half the cream, and twice the broth (I used vegetable broth, instead of chicken broth) and I topped mine with chopped flat-leaf parsley from my counter top parsley bouquet.
I served spinach salad as a side, and let me tell you, this is a miracle. I never used to be able to get my husband to eat salad. "Eating healthy is SO last year...", he would say. But, I found the magic recipe. Spinach leaves, some sort of nut or bean (toasted walnuts, chickpeas...) and some sort of cheese (feta, or in this case, shaved parmesan) AND... GODDESS DRESSING. On our recent trip to Oregon, my best friend's mom made us some salad with this vegan dressing, and although the label makes you think you might "sprout boobs.." (as my husband might say), it is truly the best dressing EVER. It goes with everything. I can't describe it, except to say it's sort of mediterranean flavored. AND AWESOME. Get thee to the store and buy some. You won't regret it.
